Viral Hot Honey Burrito Bowl

Here’s a quick and easy midweek meal I make most weeks (as someone who hates cooking!).

These burrito bowls have been everywhere on my FYP recently, and I honestly can’t believe how easy they are to make with just a few ingredients.

And the hot honey drizzle? Do. Not. Skip. It. It genuinely makes the whole bowl.

If you’re looking for quick midweek family dinners that everyone actually eats, you’re going to want to save this one. I’ve always said I’d never make the kids separate meals, and I don’t, but I do make little adaptations to make my life easier.

Ingredients

No measurements needed — use as much or as little as you like!

  • Sweet potatoes

  • Paprika

  • Garlic

  • Beef mince

  • Tomato purée

  • Oil

  • Salt & pepper

  • Sour cream

  • Avocado

  • Tomatoes

  • Red onion

  • Coriander

  • Hot honey drizzle (or chilli oil mixed with honey)

  • Grated cheese (optional for topping)

 

How I make it

  • Start by chopping your sweet potatoes into cubes, then cover with a drizzle of oil, paprika, salt and garlic. Pop them into the air fryer for around 20 minutes.

    1. While they’re cooking, finely chop your tomatoes, red onion and coriander to make a chunky homemade salsa. Drizzle in a little oil and set aside.

    2. Next, chop your avocado. You can keep it chunky or smash it like guacamole, whatever’s easier. Season with salt and pepper.

    3. Then fry off the beef mince with fajita seasoning and a good squeeze of tomato puree.

    How I serve it (this is the game-changer)

    I lay everything out family-style: homemade salsa, avocado, grated cheese, sour cream, sometimes cucumber too. I find the kids eat so much better when vegetables are served like this. They’re far more likely to try new things when they can build their own plate.

    To build your bowl

    Layer your sweet potatoes onto the plate, then top with:

  • Beef mince

  • Sour cream

  • Avocado or guacamole

  • Salsa

  • Cheese

  • And finally… a generous drizzle of hot honey. Seriously, do not skip this step. It literally makes the meal.

    It’s such a quick, easy midweek tea that feels really good quality, but is still affordable and realistic for busy family life.
